Homestyle Cooking From Central Mexico
I had the opportunity to meet the Nicole Salgado, the author of The Bajio’s Bounty – Home Cooking from the Queretaro, Mexico Region. A cookbook full of authentic homestyle Mexican recipes. She has a real love for Mexican food and people and it shows in her selection of recipes collected from family and friends.
I am really impressed with the book she has produced – So impressed that I bought a copy on the spot. When I flipped through it, I knew immediately that she had captured the essence of Mexican home cooking.
Her book is a true labor of love to introduce the reader to homestyle cooking from her husband’s home state of Queretaro. If you were to visit someone’s home in central Mexico, most likely you would be served one or even many of the dishes she describes in the book.
Vegetarian Friendly Recipes
She says that the recipes are vegetarian friendly because many dishes are made without meat or dairy. In most traditional communities very little meat is used in cooking due to cost. Food is vegetarian more out of necessity than choice sometimes.
The book contains more than 50 recipes divided into 7 sections:
- Beverages
- Sauces
- Sides
- Breakfasts
- Appetizers / Snacks
- Main Dishes
- Desserts
May favorite recipes are: Caldo de Pollo: Chicken and Vegetable Soup,
Camote con Guava: Sweet Potatoes with Guava, and Papas con Chile: Pan Fried Potatoes with Chile.
The book also includes great descriptions and suggested uses for many ingredients used in Mexican cooking that you may not be familiar with but make for a truly authentic meal.
