<p>This spicy tuna salad makes a great appetizer or light lunch especially on a hot day. It is light and refreshing. You&#8217;ll never find it in a restaurant but everyone serves it at home.</p>
<p>What differentiates Mexican tuna salad from a typical one is the bite it has from the serrano chiles and the tang from the lime juice.</p>
<p>Two cans of tuna used in this recipe go a long way when you mix in all of the vegetables. It is very economical. You can adjust the measurements to suit your tastes and the ingredients that you have on hand. This is a recipe that doesn&#8217;t require precision. Have fun with it.</p>

<h3>Spicy Tuna Salad Recipe</h3>
<p><strong>Ingredients:</strong></p>
<ul>
<li> 2 Cans tuna</li>
<li> 2 <a href="http://mexicanfoodie.com/serrano-chile-peppers/">Serrano chiles</a> minced</li>
<li> 1 Medium tomato diced</li>
<li> 1 Small onion diced</li>
<li> 1 Medium avocado diced</li>
<li> 1 Medium carrot shredded</li>
<li> 3 Sprigs of cilantro diced</li>
<li> 2 Cups lettuce finely shredded</li>
<li> 4 Tablespoons mayonnaise</li>
<li> Juice from 2 limes</li>
<li> Salt and pepper to taste</li>
<li> Hot sauce &#8211; <a href="http://mexicanfoodie.com/salsa-cholula-mexican-hot-sauce/">Try Cholula</a></li>
<li> Saltine crackers</li>
<li> Tostadas</li>
</ul>
<p><strong>Prepare:<br />
</strong></p>
<p>Add all of the ingredients except the saltine crackers, tostadas and hot sauce to a large bowl. Mix thoroughly.</p>
<p>Serve the tuna salad on the saltine crackers or tostadas. Sprinkle each serving with hot sauce. Provecho!</p>

<p>Out of all of the well known Mexican recipes, <strong>Guacamole recipes</strong> are all time favorites. Guacamole is the perfect blend of ripe avocados, Serrano chiles, tomato, onions, and cilantro. Guacamole is easy to make, tastes great, everybody loves it, and is even good for you. We make it about three times a week.</p>
<p>Let me show you how to prepare authentic Mexican Guacamole. It will take you about 15 minutes from start to finish and will serve 4 to 6 people.</p>
<p><strong>Gather the following guacamole ingredients:</strong></p>

<li> 2 cloves of garlic</li>
<li> 4 sprigs of cilantro</li>
<li> 1 lime for juice (optional)</li>

<p><strong>How to Choose Ripe Avocados</strong></p>
<p>Ripe avocados are key to making a great guacamole. Choose avocados that are dark green in color that give slightly when you when you squeeze it between your thumb and forefinger. If there is no give at all when you squeeze the avocado, it is under-ripe. If the avocado feels mushy when when you squeeze it, it is over-ripe. Avocados that are bright green in color are under-ripe and will take a few days to mature. Never refrigerate avocados.</p>
<p><strong>Assemble the Guacamole</strong></p>
<p>1. Roast the tomatoes, garlic, and Serrano chiles in a pan and allow them to cool to the touch. Dice the tomatoes and onion. Mince the garlic, Serrano chiles, and cilantro. Place all in a large bowl.</p>
<p>2. Remove the flesh from the avocados and place it in the bowl with the tomatoes, onions, chiles, garlic, and cilantro. (Although the cilantro is a traditional ingredient, I usually omit it because I don&#8217;t care for the texture in guacamole.)</p>
<p>3. Mash all of the ingredients together with the back of a fork until the avocado has the desired texture.</p>
<p>4. Add the juice of one lime. Add salt to taste. Give it one final stir. Be sure that all of the ingredients are evenly mixed throughout.</p>
<p>Serve with tortilla chips to dip the guacamole.</p>

<p>Cut up what ever fruit you have on hand, apples, pineapple, watermelon or anything else and put as much chili powder as you can stand. Then squirt lime all over the fruit and enjoy. You can also squirt hot sauce on your fruit.</p>
<p>Our favorite brand of chili powder is Tajin which is a blend of dried chiles mixed with salt. Salsa Huichol also goes well with fruit.</p>

<p>On street corners throughout Mexico, you will find vendors selling bags of cut-up fruit. You sprinkle chili powder, lime, and salt to taste on your fruit and eat it straight from the bag with a fork.</p>
